Vegan Pineapple Coconut Layer Cake :: OMG


Cake:
2 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup vegan margarine (Earth Balance for example)
1 cup sugar
3/4 cup soft or silken tofu
1/4 cup "milk" (soy, rice, almond...)
1 tsp vanilla extract
1 19-oz (540ml) can crushed pineapple

Preheat oven to 350F (175 C). Lightly oil two 8-inch pans and set aside [any pans will do, we didn't have same size pans so didn't end up layering the cake but had two of them instead :P ]. In a large bowl, stir together the flour, baking powder, baking soda, and salt. Set aside. In a food processor, blend together the margarine, sugar, tofu, "milk", and vanilla until smooth. Add pineapples and tofu mixture into the flour mixture and stir together until "just mixed". Spread evenly between the two cake pans and bake for 30-35 minutes or until a toothpick or knife comes out clean. Let cool 10-15 minutes before removing from pan. Let cool completely before frosting.


Frosting:
1 cup vegan "cream cheese"
1/4 cup vegan margarine
1 tsp vanilla extract
2 cups icing sugar
6 tbsp shredded coconut, unsweetened (optional)

In a food processor, blend the "cream cheese", margarine, vanilla, and icing sugar until smooth. Sprinkle coconut on top.

Laura Luna :: Carried by Lightning


I'll tell you a secret. There is this dazzling friend and lady in Finland who teaches tribal fusion bellydance, paints and makes jewelry and her name is Laura Luna. She also makes henna tattoos and gorgeous accessories. Here in the form of Photographs you can take a peek into her Creativelife. The first one is Laura's painting of herself and her son, Nesta.


The next is from a fashion show, the model's face painting and jewelry are by Salamankantama, which is Laura's heartfelt business, and means 'carried by lightning' (as far as I can interpret, it's a beautifully poetic word). Laura has a blog too (which is also in Finnish - but you can say hello to Google Translator if you wish, although it's tricky to get correct translation of Finnish). The last, super adorable picture is Laura as a kid, posing with her prophetically boho tribal attire - complete with a headdress. Awwwww!!!

My Remarkable Roommate


It's pretty cool to have a roommate who's always up for hooping, drumming and jamming out. And when I go hover around the door of his room and mention something or other, he always tells me to sit down on the chair and is ready to listen to whatever tragedies or feelings or euphoric babbles I have on my mind. Even if he never cleans the house I don't care :P We have hilarious times playing with the Cat. I actually named her Lucy after an incident in which the Cat almost caused my laptop to drop to the kitchen tile floor. Lucy's short for Lucifer. But back to my human roommate. Lex calls me Cinderella because I clean so much. How fabulous is that!! And we get all types of crazy ideas together. This is us hanging out last Friday.

Transylvania Calling :: Psytrance Festival


Transylvania Calling is an alternative lifestyle, music and arts festival that goes on for seven days, every two years, in Romania. It's one of those festivals I'd love to go to one day. People from all over the world gather there for the amazingly-beautiful-nature-artistic-wonderland experience and to connect with other likeminded folk. They have a lot of focus on workshops about healing, growth, wellbeing, nurturing and communicating. Here are some photos from last August's festival taken by French photographer Come Callais who gave me an elven permission to post these glimpses of Transylvania here for all to see :)













Yes, the fairy in the third to last photo is Oona whom we already know. I'm going to a psytrance party myself tonight in Brooklyn, NY and am very excited! Perhaps I'll take a couple of photos too. It's been too long since the last time I got to dance all night long. I even skipped hooping last night so I will have maximum energy tonight. And only hooped lightly the night before. Straight-edge raving is a delicate science that requires careful planning. Or gets to be that way as the body gets older, anyways :P Have a splendid weekend everyone!
